Broccoli and Parsnip soup

3 parsnips
1 1/2 cups (375ml) vegetable stock
2 to 3 cloves garlic
1 tbs parsley
1/4 tsp ground black pepper
1 1/2 cups low fat milk (or another 1 1/2 cup of vegetable stock)
Rinse and chop the floret heads from the broccoli and cut them in half. Peel the parsnips and chop in goodly chunks. Put in microwavable bowl (I used large PYREX glass bowl). Put a little bit of water (and I mean LITTLE bit) in the bowl, cover with cling wrap, and microwave for 15 to 18 minutes. Veggies are cooked when tender, not mushy. Do not toss the liquid in the bottom of the bowl.
Put broccoli and parsnip in food processor. Depending on the size of your food processor, you might have to do this twice. If you have to, use half the 375ml in each load. Also use water in the bottom of the bowl as it is also vegetable stock now.
Put processed veggies into a large bowl. Mince or use garlic press, and add the garlic to the mixture. Add 1 tablespoon parsley, and 1/4 tsp pepper. With a Stick mixer, blend the seasonings through the veggie/stock mixture. Add 1 1/2 cup of milk in small increments, blending with stick mixer as you go. If you want it vegan, or have dairy issues, use another 1 1/2 cup of vegetable stock in place of milk.
You can add more milk/stock or less, depending on how thick you want your soup. Salt and pepper to taste.
Total preparation time: 20 minutes, and serves at least 4
Serve with loaf of bakery bread.
