Can the results be THAT fast???

I have been noshing using the diabetic cookbook, have cut out all processed sugars, ditched the high GI rice, potatoes, white bread etc etc from my diet.  Jeans I had to pretty much shoehorn my ass into just 2 weeks ago are now fitting baggily (damn, am I glad I only spent $15 per pair) even after being cooked in the clothes dryer for 2 hrs after washing.
